Three Cheese Pasta with Broccoli and Asparagus

Three Cheese Pasta with Broccoli and Asparagus

  • Servings: 4

Ingredients:
300 ml cream
50 gr butter
1/3 cup of grated Parmesan Cheese
1/3 cup of grated Romano Cheese
1/3 cup of grated Cheddar Cheese
500 gr of pasta
200 gr of broccoli
200 gr of asparagus

Garnish
a dash of ground black pepper
a dash of chopped parsley

Directions:
1. Cut broccoli into florets, cook in a pot of boiling water for 1 min. Drain and set aside.
2. Prepare asparagus by gently bending the end to remove the woody part. Cook in a pot of boiling water for 2 minutes. Drain and cut into smaller pieces.
3. Cook pasta in a pot of boiling salted water.
4. Combine butter and cream in a saucepan and bring to simmer over medium heat until butter melts.
5. Add cheese into the saucepan. Reduce to low heat and stir until cheese melts.
6. Drain pasta. Save ½ cup of pasta water.
7. Add pasta, broccoli and asparagus to the pan and stir.
8. Add pasta water and cook for another minute.
9. Serve with ground black pepper, and chopped parsley.

50 gr butter – $1.90 (for 250 gr)
1/3 cup of grated Parmesan Cheese – $1.70 (for 100 gr)*
1/3 cup of grated Romano Cheese – $4.00 (for 200 gr)*
1/3 cup of grated Cheddar Cheese – $6.30 (for 200 gr)*
500 gr of pasta – $1.00
200 gr of broccoli- $1.60
200 gr of asparagus – $3.00
Parsley – $1.30 (for a packet)
Cost per serve: Less than $4.00
